-The Big Blue Burger (Dave Sudol - Max Burger)

 

 

Ingredients

8oz all natural beef patty

Great Hill Farms Blue Cheese

Baby Arugula

Shaved Red Onion

Bacon Onion Jam

Artisan Roll

 

Season beef with salt and pepper just before cooking. Grill needs to be hot and clean, brush with oil. You want a nice hard sear on each side to seal in the juices. Let the grill do its job; don't keep flipping the burgers and don't squeeze out all the juices of the burger.

When some juices just start to flow out, you are at medium rare. When they flow out quickly, that is medium. When they have stopped coming out, it's at medium well. When the patty looks like a hockey puck, it is done.
